Still in Stage I: Eliminate gluten, dairy, soy, & eggs
Menu (8/10-8/16)
M--Roasted Chicken, German potato salad, zucchini
**I love roasted chicken. It is also inexpensive & pre-made at many grocery stores. Since Mondays are my shopping days, I make it a point to pick one up with the rest of the groceries and then have a very quick & easy dinner that night.
T--Salad: Tabouleh w/ quinoa & figs & left over chicken breast.

W--Steak, tater tots, broccoli. ( I realized afterward that the tots contain some soybean oil. *sigh*)
R--Gluten & egg free meatloaf & green veg.
F-- Salad: Moroccan carrot salad w/ harissa dressing
**On Tuesday I made a double batch of the tabouleh minus the figs & chicken. Thursday add carrots, etc.
Sat.--Chana Masala w/ brown rice
**I have been incorporating more and more Asian recipes lately since a) they are delicious and we miss going out to restaurants, b) they offer interesting vegetarian options, c) they are often dairy free. This one is simple and ticks all the right boxes.
Sun.-- Salad: buffalo chickpea salad
**So much salad. This summer we have been trying to plan for a salad dinner every other day. We get to incorporate all the delicious fresh produce of the season, and it is light and digestible in the So.Cal. heat. We try to make them vegetarian as often as possible. Without added dairy & meat, it is also low-cal, which is a nice bonus.
Thoughts after shopping this week:
1) There is soy in d** near everything including hash brown patties, dark chocolate, and popcorn oil. Those items also mysteriously contain milk.
2) I now have 5 different kinds of potato/potato products in my house. This seems excessive.
3) This was more expensive than I had anticipated. Partly, I think because I ended up getting several hummus-type dips & crudites for lunches. Also, I got some dairy/soy/gluten free pastas (to test out next week) & coconut milk ice cream (for husband)--all of which was easily 3x as expensive as the regular stuff. oof.
